Ingredients

 

4 halibut fillets, about 175g each
6tbsp butter, plus extra for greasing
Salt and pepper
2 garlic cloves, finely chopped

 

GARNISH
Sprigs of fresh parsley
Thin strips of orange zest

TO SERVE
Crisp salad leaves
Cherry tomatoes, cut into slices

Method

 

Preheat the grill to medium. Rinse the fish fillets under cold running water, then pat dry with kitchen paper.

Grease a shallow, heatproof dish with butter, then arrange the fish on it. Season with salt and pepper.

In a separate bowl, mix together the remaining butter with the garlic. Arrange pieces of the garlic butter all over the fish, then transfer to the grill. Cook for 7-8mins, turning once, until the fish is cooked through.

Remove the fish from the grill. Using a fish slice, remove the fillets from the dish and arrange on individual serving plates. Pour over the remaining melted butter from the dish, and garnish with sprigs of fresh parsley and strips of orange zest. Serve with crisp salad leaves and cherry tomato slices.
