Ingredients

 

6tbsp extra virgin olive oil
1 onion, sliced
1 leek, trimmed and sliced
Juice of half a lemon
2tbsp chopped fresh parsley
2tbsp chopped fresh dill
Salt and pepper
500g salmon fillets

 

GARNISH
Slices of lemon
Sprigs of fresh dill

Freshly booked baby spinach leaves, to serve

Method

 

Preheat the oven to 200°C/400°F/Gas Mark 6. Heat 1tbsp oil in a frying pan over a medium heat. Add the onion and leek and cook, for about 4mins, until slightly softened.

Meanwhile, put the remaining oil in a small bowl with the lemon juice and herbs, and season. Stir together well. Rinse the fish under cold running waster, then pat dry with kitchen paper. Arrange the fish in a shallow, ovenproof baking dish.

Remove the frying pan from the heat and spread the onion and leek over the fish. Pour the oil mixture over the top, ensuring that everything is well coated. Roast in the centre of the preheated oven for about 10mins or until the fish is cooked through.

Arrange the cooked spinach on serving plates, Remove the fish and vegetables from the oven and arrange on top of the spinach. Garnish with lemon slices and sprigs of dill. Serve at once.
