Thai Fish Burgers

350g haddock fillets, skinned and cut into small pieces |
1tbsp finely chopped lemon grass TO SERVE |

Put the haddock, almonds, breadcrumbs, onion, chilli, egg white, soy sauce, lemon grass and coriander into a large bowl and stir together. Put the mixture into a food processor and process until thoroughly blended. Transfer to a clean work surface and, using your hands, shape the mixture into flat, round burger shapes. Heat the oil in a frying pan and add the burgers. Cook for about 5mins, turning once, until cooked through. Remove from the heat. Serve with hamburger buns stuffed with tomato slices and crisp lettuce, and a green side salad. |
