It's vital to have great pears for this recipe - don't make it if you can't find them in the shops! Serve with roasted meat or as a starter on its own.

Ingredients

 

2 pears
8 big handfuls of watercress
8 big handfuls of rocket
Extra virgin olive oil

 

Lemon Juice
Salt and freshly ground black pepper
Walnuts
Parmesan or pecorino cheese

Method

 

Peel the pears, cut them in half, deseed and then cut them up. Place them in a bowl with the watercress and rocket. Drizzle with extra virgin olive oil just to coat, a small squeeze of lemon juice, and season well with salt and freshly ground black pepper. Toss this all together and put on serving plates. Shave over some Parmesan or pecorino cheese, crumble the walnuts over and serve.
